My favourite slimming world meals 

  
I have been somewhat of a crap slimming worlder since I got married. Being crazy in love really doesn’t do any wonders for staying slim let me tell you that! I have gained around a stone since I got married in the beginning of October. The Emma a year ago would have had a nervous breakdown if you were to tell her she would gain a stone after the wedding. But in the grand scheme of things I have gained about 1lb a week since the wedding including all the Christmas festivities so you know what I’m okay with that. The new Emma is okay with that. I’m happy. Like Really really happy. So now I’m going to focus on being healthy alongside slimming world and not focus on the scales as much. I.e. Stop having KFC every week will yaaaaaaa hun. I’ve complied a list of a few of my favourite healthy slimming world meals to get me back on track for 2016!

  
Roast dinner. Super easy and one of the most slimming world adaptable meals. Everything is syn free, full of speed foods and 3 syns for gravy (I like a lot of gravy!)

  
The famous baked oats. A firm breakfast favourite of mine. 35g oats (healthy extra B), 1 egg, 50ml of milk & 3tbsp sweetener & then pop into an oven proof dish and bake at 200 until golden which is around 20 mins. I topped mine with berries & 4 syns of Nutella

  
Chicken salad. Probably one for the summer as I hate having a cold lunch at work when it’s freezing! This is just lettuce, cherry toms, spring onions and chicken. I prefer it when my salad is chopped up really small, I swear it tastes better!

  
Syn free chilli. I make mine using 500g of 5% fat lean mince, kidney beans in chilli sauce, chopped tomatoes and peppers, there’s always loads leftover so it’s handy to have for lunches for the rest of the week. When I’m being extra good I serve it on a bed of spinach rather than with rice or with chips and top with homemade guacamole. Avocado is quite high in syns but it’s a healthy fat so I don’t mind having it now and then.

  
Potato rosti stack. This is syn free and it’s so delicious! Full recipe is on the slimming world website. I find it’s really good for staying on plan at the weekend as it feels a bit more of a special meal!

  
Slimming world style KFC twister wrap. My faaaaaaave! Lil (stayingslimlil on Instagram) has a full talk through video on YouTube on how to make this just search for Lillie Farrow. It is honestly amazing and tastes better than a KFC!
